You will need:

Empty jars

  • 200g cooking apples (peeled and cored)
  • 100g suet (can use vegetarian suet or chopped block butter), shredded
  • 450g mixed fruit, dried
  • 150g soft dark brown sugar
  • 50g nuts (use almonds, walnuts, pecans, etc), finely chopped
  • orange (zest from 1 orange)
  • lemon (zest from 1 lemon)
  • 1 tsp mixed spice
  • 1 tsp cinnamon, ground
  • 4 tbsp brandy (whisky or rum)

  1. First wash the mixed fruit in a colander and dry on clean tea towels to remove stalks and grit - this is especially important if you use economy dried fruit
  2. 炉篦苹果或者加入食品processor and whiz for a few seconds until in small pieces
  3. Mix all ingredients (except the brandy/whisky/rum) with the apples
  4. Put into a microwave proof bowl, cover with cling film and cook on medium for about 10 minutes, stirring every minute or so (or cook in a large saucepan) - this is to melt the suet/butter and plump up the dried fruit
  5. Allow to cool and stir occasionally to mix the fat back in
  6. When the mixture is cold, mix in the brandy/whisky/rum
  7. Pour into sterilised jars, cover mincemeat with wax discs and seal the jars tightly
  8. Label and keep in a cool dark place
  9. Fills around 3 average jam jars

Sterilise clean jam jars and lids, by heating them in a warm oven 140'C/Gas mark 1 for at least 5 minute
